The Best Flooring for Food Factories and Commercial Kitchens
Why polyurethane cementitious screeds dominate food production and kitchen floors, how drainage, coving and anti-slip texture are detailed, and how to phase work around production.
Food production floors have to survive a combination of demands that almost nothing else does: hot water and steam, aggressive detergents, fats, sugars, fruit and dairy acids, thermal cycling between chill and ambient, pallet and stillage traffic, and daily cleaning — while staying hygienic and safe underfoot when wet.
The system: polyurethane cementitious screed
Polyurethane HF screed at 6–9 mm, and up to 12 mm in the heaviest process areas, is the standard specification, for good reasons:
- Withstands steam cleaning and hot spillage without crazing
- Tolerates a broad temperature range and rapid thermal change
- Resists lactic, fruit and other organic acids that break epoxies down
- Seamless and impervious, so there is nowhere for bacteria to sit
- Moisture-tolerant, so it can often be installed over damp slabs without a separate membrane
- Available with graded anti-slip texture for wet areas
Epoxy is not the right system for a wash-down production area. It performs well in dry stores, packing halls and warehousing attached to a food site, and it will craze and debond in the wet process zone.
Detailing decides how hygienic the floor is
The field area is the easy part. The failures happen at the edges.
- Coving to walls, plinths and machine bases in the same material, so there is no open joint
- Falls to drainage laid into the screed so water actually leaves the floor
- Drain and gully surrounds terminated into the drainage rather than butted against it
- Upstands and bunds where chemicals are stored or decanted
- Termination details at doorways and thresholds
Anti-slip texture, matched to the room
Texture is a balance. Too smooth and a wet floor is a slip hazard; too coarse and the floor cannot be cleaned properly, which is a hygiene problem. Texture should be graded by area — heavier in wash-down and standing water zones, lighter in packing and dry areas — and matched to the cleaning method actually used on site.
Working around production
Food sites cannot be handed over empty for a fortnight. In practice we work room by room during planned shutdowns, nights and weekends, with hoarding and dust control between the works area and production. Where a room has to be back in use within hours, an MMA build-up may be substituted, and in chilled areas MMA installs at temperatures where nothing else cures.
Compliance and documentation
We specify systems on the basis of the manufacturer''s published data for the environment concerned and provide the product data sheets, RAMS and cleaning and maintenance guidance at handover, so the floor can be signed into your food safety documentation. We do not make certification claims on a manufacturer''s behalf — the data sheets speak for themselves.
